Try this classic, refreshing cocktail with your favourite rum. Experiment with a homemade ginger syrup and soda water for a nice alternative to ginger beer.

Ingredients

  • 50ml/2fl oz dark rum (such as Gosling’s Black Seal Rum)
  • 10ml/2 tsp freshly squeezed lime juice
  • 2 handfuls ice
  • ginger beer
  • mint sprig and lime wheel, to garnish (optional)

Method

  1. Put the rum and lime juice into a cocktail shaker and fill it with ice, then shake vigorously to combine the ingredients.

  2. Strain the mixture into a collins glass over fresh ice using a hawthorne cocktail strainer. If you don’t have a strainer, any kitchen sieve will work just as well.

  3. Top with ginger beer and stir gently, then garnish with the mint and lime wheel, if using.
