Method

  1. Heat the olive oil in a frying pan over a medium heat and fry the garlic for 1-2 minutes. Add the spinach and continue to fry until the spinach has wilted. Pour in the cream and season, to taste, with nutmeg, salt and freshly ground black pepper.

  2. Continue to heat for 2-3 minutes, or until the volume of the liquid has reduced slightly.

  3. Blend the mixture together with a stick blender. Spoon into a bowl and garnish with extra grated nutmeg, to taste.
