Use the tortelloni of your choice to make this brilliantly quick and easy recipe.

In November 2023, this recipe was costed at an average of £1.90 per portion when checking prices at four UK supermarkets. The recipe is designed to be made in conjunction with a low-cost store-cupboard.

Ingredients

  • 40g/1½oz butter
  • 300g pack fresh tortelloni (any type is fine)
  • 50g/1¾oz finely grated Grana Padano or Parmesan, plus extra to serve
  • salt and freshly ground black pepper

Method

  1. Melt the butter in a large frying pan and cook over a medium heat for 3–4 minutes, swirling until the butter turns golden and smells nutty.

  2. Meanwhile, cook the tortelloni according to packet instructions in a saucepan of boiling, lightly salted water. Drain the pasta, reserving some of the cooking water, and add to the butter in the frying pan.

  3. Add the grated cheese and a small ladle of the pasta water. Toss together until the cheese has melted and the pasta is coated.

  4. Divide the pasta mixture between bowls and serve with a sprinkle of cheese and good grinding of black pepper.
