Pasta might not be your typical air fryer recipe, but as a shortcut to making a delicious sauce it works a treat. An air fryer makes light work of cooking the prawns and tomatoes so this easy recipe for one is perfect for weeknights.

This recipe is part of an air fryer meal plan for one.

Each serving (without the optional serving suggestion) provides 576 kcal, 30.7g protein, 42g carbohydrate (of which 5.8g sugars), 30.8g fat (of which 4.6g saturates), 2.1g fibre and 2.08g salt.

  1. Half fill a large saucepan with water, add a generous pinch of salt, cover with a lid and bring to the boil. Add the pasta and cook, uncovered, for 12 minutes or until tender, stirring occasionally to separate the strands.

  2. If necessary, preheat your air fryer at 200C for 3 minutes, or until it reaches temperature.

  3. Put the tomatoes on a small piece of kitchen foil and bring up the sides to create a shallow bowl. Place carefully on the warmed crisper plate, ensuring that the air can flow around it. Cook at 200C for 3 minutes.

  4. Toss the prawns, garlic, chilli, olive oil and lots of ground black pepper together in a bowl. Scatter on top of the tomatoes and cook for a further 2–3 minutes at 180C, or until the garlic and tomatoes are softened and the prawns are hot.

  5. Drain the pasta and return to the saucepan. Add the prawns and tomatoes, along with any juices. Sprinkle with the lemon zest and parsley, then season with lots of black pepper. Toss well and serve in a warm, shallow bowl.

Recipe tips

You can use any cooked, peeled prawns for this recipe. Bear in mind that the smaller the prawn, the quicker it will cook. As soon as they begin to curl, they’re ready. If they become tight crescents, they will be overcooked.

Freshly chopped chilli can be swapped for dried chilli, but it’s difficult to judge the degree of heat fresh chilli will add. Taste a little before adding to the prawns if you like, then either reduce the amount or supplement with a pinch of dried chilli.

You can cook any pasta you like instead of the linguine, but long shapes work particularly well. Choose the reddest, ripest cherry tomatoes you can find, or add a couple of very roughly chopped vine tomatoes instead.

This recipe was tested using a 4–litre capacity air fryer. If yours has a much larger or smaller capacity, you will need to adjust the cooking times.
