Anna Haugh's Two Ingredient Chocolate Mousse

Chocolate Mousse decorated with flowers, honey, orange zest, mint and bee pollen.

Serves: 4
INGREDIENTS:
220g Dark chocolate chopped (56% + cocoa)
180ml boiling water
A bowl of Ice
OPTIONAL TOPPINGS
1 tsp fennel seeds
Dried/foraged flowers
Zest of one orange
1 tsp of honey
1 tsp of bee pollen
METHOD:
Place the chocolate in a heatproof bowl and add the boiling water. Leave for 10 seconds.
Stir the chocolate into the water until it's completely melted.
Take another bowl filled with ice and water, place the bowl with the chocolate mixture on top, and using a hand whisk, whisk for around 5 minutes until it thickens and creates a mousse like texture.
Scoop and serve in small bowls.
