Anna Haugh's Two Ingredient Chocolate Mousse

Serves: 4

INGREDIENTS:

  • 220g Dark chocolate chopped (56% + cocoa)

  • 180ml boiling water

  • A bowl of Ice

OPTIONAL TOPPINGS

  • 1 tsp fennel seeds

  • Dried/foraged flowers

  • Zest of one orange

  • 1 tsp of honey

  • 1 tsp of bee pollen

METHOD:

  • Place the chocolate in a heatproof bowl and add the boiling water. Leave for 10 seconds.

  • Stir the chocolate into the water until it's completely melted.

  • Take another bowl filled with ice and water, place the bowl with the chocolate mixture on top, and using a hand whisk, whisk for around 5 minutes until it thickens and creates a mousse like texture.

  • Scoop and serve in small bowls.
