Jimmy Lee's Fresh Ho Fun Noodles

Homemade fresh Ho Fun noodles.

INGREDIENTS

  • 250g of rice flour (not glutinous)

  • 125g tapioca starch

  • 375ml water

  • ½ tsp vegetable oil

METHOD

  1. In a bowl mix the rice flour and tapioca starch.

  2. Slowly add water until it creates a lump free batter. Mix until smooth and frothy. Wait for 1 min until mixture settles.

  3. Gently oil a baking tray that fits the steamer and rub with a paper towel until oil is evenly spread.

  4. Gently pour a thin layer of mixture (1mm-2mm thick) onto the baking tray. Ensure mixture is evenly spread and level.

  5. Use a steamer or a large flat based pan with a steaming rack as a steamer.

  6. Add water and bring to boil.

  7. Steam over high heat for 3-4 minutes until noodle sheet is translucent and cooked.

  8. Remove the noodle sheet from baking tray with a spatula.

  9. Have a large bowl ready with cold water. Dip the noodle sheet into the cold water so that the noodles don't become sticky and to get rid of impurities.

  10. Take noodle sheet and roll into a log length ways. Cut 1cm thick slices.

  11. Unroll each noodle and place on plate ready to use.

  12. Add a drizzle of vegetable oil to noodles to prevent sticking and repeat until batter used up.
